Definition
Food preservation is the process of slowing or preventing food spoilage by controlling the growth of microorganisms, reducing chemical changes, and protecting food from physical damage. Different preservation methods achieve this by reducing available water, increasing acidity, lowering temperature, removing oxygen, applying heat, or combining several of these techniques. The primary goals are to improve food safety, extend shelf life, reduce food loss, and make seasonal foods available throughout the year.

Traditional Food Preservation in India
India has one of the world's richest preservation traditions because of its climatic diversity, agricultural seasons, and regional food cultures.
Long before electricity became widespread, households developed methods suited to local weather and available ingredients.

Sun Drying
Raw mangoes, chillies, fenugreek leaves, amla, jackfruit, papads, lentil dumplings, and many spices are traditionally dried under the sun.
Drying lowers water activity, making foods more stable during storage.
Salt Preservation
Salt has long been used to preserve vegetables, fish, meat, lemons, and mangoes.
Besides contributing flavour, salt reduces available water and creates conditions that inhibit many spoilage organisms.
Oil-Based Preservation
Many North Indian pickles are preserved using mustard oil.
The oil acts as a protective barrier that reduces direct contact between the food and air. Combined with salt, spices, clean preparation practices, and proper storage, oil contributes to longer shelf life.

Fermentation
Foods such as kanji, gundruk, bamboo shoots, idli batter, dosa batter, and several regional pickles rely on beneficial microorganisms.

Sugaring
Fruit preserves, murabba, jams, and candied fruits use concentrated sugar to reduce water availability and extend storage life.
