Sun-dried mango pieces are blended with dry-roasted whole spices: mustard, fennel, fenugreek, coriander, cumin, and nigella seeds, finished with red chilli powder, turmeric, black pepper, and salt. Submerged in kachi ghani mustard oil heated to smoking point and cooled, then sun-matured for 4 to 6 days with daily turning.
