Growing up in eastern Uttar Pradesh, I do not remember anyone talking about seasonal eating. The phrase itself would have sounded strange. Seasons were not something people discussed; they were simply how life was organised.
Summer announced itself through mangoes. Winter brought mustard greens, radish, carrots and fresh peas. Monsoon changed what grew in the fields and what appeared in kitchens. Certain festivals arrived with certain harvests, and periods of abundance often meant that some of the produce would be preserved for later.
There was no need to explain what was seasonal because almost everything was.
Today, however, it is possible to buy many fruits and vegetables throughout the year. Modern supply chains have made food available across seasons and geographies. While this has increased convenience, it has also made it easy to forget that crops evolved alongside local climates, ecosystems and cultures. The question is not whether year-round availability is inherently bad. Rather, it is worth asking what role seasonality once played, and what might be lost when food becomes detached from the seasons that produce it.
Crops and climates evolved together
For thousands of years, farming communities observed rainfall patterns, temperatures and soil conditions and selected crops that were suited to their environments. Rice varieties adapted to flood-prone regions, millets thrived in drier landscapes, and countless local vegetables emerged through generations of interaction between people and nature.
According to the Food and Agriculture Organization (FAO), biodiversity forms the foundation of agriculture and food systems. Agricultural biodiversity includes not only crops, but also pollinators, microorganisms, livestock and genetic diversity within species.
Seasonal crops are part of this larger web. They are not random products appearing on supermarket shelves. They are outcomes of long relationships between ecosystems and human communities.
This is perhaps why many traditional crop calendars feel so intuitive. They reflect centuries of accumulated knowledge rather than centrally designed plans.
Diversity in the field creates resilience
Modern food systems rely heavily on a small number of crops. Wheat, rice and maize together provide a significant share of the world's calories. While these crops are important, dependence on a narrow range of species creates vulnerabilities.
Agricultural biodiversity acts as a form of insurance. Diverse cropping systems can reduce risks from pests, diseases and changing weather conditions. Different varieties respond differently to drought, excess rainfall or temperature fluctuations.
Climate change is making this diversity increasingly important. Heat waves, erratic rainfall and extreme weather events are already affecting agricultural production across the world. Research by the IPCC and organisations such as CGIAR has repeatedly highlighted the importance of crop diversity and locally adapted farming systems in building resilience.
In many ways, diversity in agriculture resembles diversity in society. Systems that depend on only one thing often become fragile.
Seasons shape diets
One of the overlooked benefits of seasonal foods is that they naturally encourage dietary diversity.
Summer brings cucumbers, gourds, mangoes and watermelons. Monsoon introduces its own set of vegetables and greens. Winter offers mustard leaves, carrots, radishes and peas. As seasons change, diets change with them.
FAO has emphasised the relationship between biodiversity and dietary diversity. Different crops contribute different vitamins, minerals and phytochemicals. A food culture that changes with seasons exposes people to a wider range of nutrients over the course of a year.
Traditional cuisines often evolved around this principle without using the language of nutrition science.
People may not have spoken about micronutrients, but they understood seasons.
Growing with the season often means fewer inputs
A crop grown in its natural season generally works with prevailing weather conditions rather than against them.
This can translate into lower requirements for irrigation, temperature control and other external inputs. A vegetable that naturally thrives during winter does not have to struggle against extreme heat. Likewise, crops adapted to local rainfall patterns may require less intervention.
This does not mean seasonal agriculture is free from challenges. Farmers continue to face uncertainties and climate variability. Yet crops that are aligned with local ecological conditions often fit more comfortably within those environments.
FAO's work on sustainable diets recognises the importance of local and seasonal production in reducing environmental pressures.
Perhaps there is a lesson here. Nature rarely hurries, and systems that work with natural rhythms often demand less force.
Rural livelihoods depend on seasons
Seasonality is not merely an agricultural phenomenon. It also shapes rural economies.
For farming households, seasons determine labour patterns, incomes and local markets. Abundance during one period often creates opportunities for processing, preservation and value addition.
A good mango season can support producers making pickles, preserves and chutneys. Amla season creates possibilities for murabba and candies. Lemon harvests give rise to preserved lemons. Jackfruit seasons support drying and processing traditions.
In many parts of India, women have historically played a significant role in these forms of value addition. Practices that began as ways of managing abundance also became sources of livelihood.
Seasonality creates cycles of work and opportunity. Remove those cycles, and entire knowledge systems may weaken.
Preservation traditions emerged because seasons existed
Pickling, drying and fermenting are often discussed as culinary traditions. But they were also practical responses to abundance and scarcity.
When produce arrived in large quantities, households found ways to extend its life.
Summer meant mango pickles and papad.
Winter brought carrot and turnip pickles.
Different regions developed different methods depending on climate, ingredients and cultural preferences.
Preservation was not merely about taste. It was about managing time.
In many ways, every jar of pickle represents a conversation between a season and the future.
Perhaps this is why traditional preservation feels deeply human. It acknowledges that abundance does not last forever.
Seasons shape culture
Food and culture are difficult to separate.
Festivals across India are closely linked to agricultural cycles. Pongal celebrates newly harvested rice. Makar Sankranti is associated with sesame and jaggery. Onam reflects the rhythms of the monsoon harvest.
Regional cuisines themselves are products of ecological conditions. What people eat has always depended on what grows around them.
When food systems become increasingly standardised, some of this regional diversity begins to disappear. Crops, recipes and food memories that once defined particular landscapes gradually lose their place.
The loss is not only agricultural. It is cultural.
What happens when food stops following seasons?
Modern food systems have undoubtedly improved availability and reduced many forms of scarcity. Yet they have also created a sense of permanence around foods that were once fleeting.
When everything is available all year round, abundance becomes ordinary.
Perhaps that is what seasons once taught us most clearly: that things arrive, stay for a while and then leave.
The first mangoes of summer were special precisely because they could not be eaten in December. Winter greens tasted different because they belonged to winter. Waiting itself gave meaning to food.
Today, convenience has reduced the need to wait. But in doing so, it may also have weakened our awareness of the rhythms that sustain us.
Remembering the wisdom of seasons
The answer is not to romanticise the past or reject modern agriculture. Rural life has never been free from hardship, and food systems have always evolved.
Yet there is value in understanding why traditional societies organised themselves around seasons.
Seasonal crops support biodiversity. They contribute to dietary diversity. They often require fewer external interventions. They strengthen rural livelihoods and sustain preservation traditions. They connect food with culture and ecosystems.
More importantly, they remind us that food does not begin in markets.
It begins with rainfall, soil, insects, sunlight, seeds and the accumulated wisdom of people who learned to work with the seasons rather than against them.
Perhaps that is why seasonal crops matter.
Not because they are fashionable.
Not because they belong to the past.
But because they remind us that human beings have always been part of nature's calendar, even if we have begun to forget how to read it.
