This traditional stuffed red chilli pickle recipe, also known as bharwa lal mirch ka achar, follows a centuries-old North Indian method of preserving whole red chillies with aromatic spices and kachi ghani mustard oil. Inspired by the authentic Banarasi red chilli pickle tradition, this pickle is hand-stuffed, sun-cured, and naturally preserved without synthetic preservatives.

Step 1: Select and Sun-Dry the Chillies

Choose thick, ripe red chillies free from blemishes. Wash and dry them thoroughly.

Spread the chillies under direct sunlight for 1 day. This reduces excess moisture while preserving the chilli's natural heat and flavor compounds.

Step 2: Prepare the Chillies

Using a sharp knife, carefully cut each chilli lengthwise.

Remove the seeds and set them aside. Keep the chilli halves intact, as they will hold the spice filling during the curing process.

Step 3: Prepare the Spice Filling

In a large bowl, combine:

  • 30 g coriander powder (roasted)

  • 30 g cumin powder (roasted)

  • 30 g black pepper powder 

  • 20 g fennel seeds (roasted)

  • 30 g red chilli powder 

  • 40 g salt

  • 170 g mustard powder

  • 30 g ajwain

  • 30 g nigella seeds

  • 10 g turmeric powder

  • 70 g amchur powder

  • Reserved chilli seeds

Add 100 g mustard oil and mix thoroughly to create a rich stuffing mixture.

Step 4: Stuff the Chillies

Fill each chilli generously with the prepared spice mixture.

Press the stuffing firmly into the cavity so that it remains secure during curing while avoiding overfilling that could split the chilli.

Step 5: Dip in Mustard Oil

Heat 200 g kachi ghani mustard oil gently and allow it to cool completely.

Dip each stuffed chilli individually into the cooled mustard oil until fully coated.

This coating helps preserve the chillies and promotes even curing.

Step 6: Jar and Sun-Cure

Arrange the stuffed chillies tightly inside a clean, dry glass jar.

Pour any remaining mustard oil over the chillies until they are fully covered.

Seal the jar and place it in direct sunlight for 5 to 7 days.

Shake the jar gently every 2 to 3 days to ensure even distribution of oil and spices.

By the end of the curing period, the chillies will have absorbed the spice flavors completely.
