A timeless condiment rooted in rural Indian kitchens.

How long does it last?

Properly made homemade mango pickle lasts for years when stored in a cool, dry place. The combination of salt, antimicrobial spices, and kachi ghani mustard oil creates natural preservation that prevents spoilage. Unlike commercial pickles relying on synthetic additives, genuine homemade pickle develops deeper flavor complexity with age, improving over months and years.

Does it require refrigeration?

No, homemade mango pickle does not require refrigeration. The natural preservation methods—salt, turmeric, antimicrobial spices, and kachi ghani mustard oil—create an environment hostile to bacteria and mold. Simply store your jar in a cool, dry pantry or shelf. This is how pickles have been preserved for generations without electricity or modern refrigeration.

Is it made with mustard oil?

Yes, authentic Aam ka Achaar is made with kachi ghani mustard oil, cold-pressed below 40-50°C without heat or chemicals. This preserves natural isothiocyanates, antimicrobial compounds that prevent spoilage and extend shelf life. Unlike refined oils, kachi ghani mustard oil retains bioactive compounds that act as natural preservatives while adding signature pungent flavor.

Is it spicy?

Aam ka Achaar has a moderate to medium spice level from red chilli powder and whole spices. The heat is balanced with sourness from raw mango and aromatic warmth from fennel, fenugreek, and cumin. Spice intensity can be adjusted during preparation to suit your preference. Most people find it pleasantly warming rather than fiercely hot.

Is it vegan?

Yes, Aam ka Achaar is completely vegan. It contains only raw mangoes, mustard oil, salt, and spices—no animal products whatsoever. Every ingredient is plant-based, making it suitable for vegan, vegetarian, and plant-forward diets. It is a naturally vegan condiment that has been enjoyed across Indian households for generations.

How is it different from market pickle?
